The way a wine ages is all about the effect of air on the liquid. This little space here is where it all happens. Once you open a wine, the seal is gone and the oxygen can get to work. Many modern white and red wines are made in a way that totally excludes contact with air and, in fact can benefit with a little bit of aeration but there’s always a happy medium and sometimes your own nose and palate are the best judge.
